In the Swiss gastronomic landscape, some establishments go beyond the status of a simple restaurant to become true cultural institutions. Le Pont de Brent, a historic eatery nestled in the heart of the Riviera, perfectly embodies this prestigious definition.
When Gérard Rabaey, an emblematic figure of Swiss gastronomic cuisine, wished to hand over his establishment, the question was daunting: how to preserve the fruit of a lifetime's work and passion for others, and allow his culinary heritage to be renewed under new designs? It was precisely in this delicate context that Groupe Bernard Nicod and BN Conseils were asked to support this transition by providing their skills and advice.
Our mandate focused on a marketing approach tailored to the owners' wishes. It began with an in-depth analysis of the situation and took into account a sentimental as well as a strategic approach. It was not a question of finding buyers for a restaurant, but rather of finding successors capable of preserving the gastronomic and artistic continuity of Le Pont-de-Brent.
This is how the establishment found its new tenants in Mr. Joeffrey Fraiche and Ms. Helena Collaud, who appeared to be "The Chef and his team" perfect for this establishment. This ingenious and creative young couple have already demonstrated their talent at the Hôtel de Ville d'Avenches, combining tradition with a desire for innovation.
You'll be incredibly surprised by their bold cuisine combining creativity and precision. Dishes reveal subtle combinations like a tartlet with squash and mandarin oranges, a baked oyster accompanied by a leek fondue, or a roasted lacto-fermented carrot declined in different textures. Pastry chef Roman Majecki adds his innovative touch with surprising desserts such as beet with shiso and lime, testifying to an exquisite inventiveness and whimsy.
Gérard Rabaey himself, present at the reopening, expressed deep satisfaction. His look, at once nostalgic and full of hope, confirmed that the soul of Pont de Brent had not only been preserved, but regenerated.

For Groupe Bernard Nicod and BN Conseils, this project went far beyond a simple commercial mandate. Above all, it was about preserving a gastronomic heritage, enabling its renewal and continuity in its transmission.
